1 x Cup fresh curley leafed parsley - thoroughly washed and fully dried then chopped
1/2 x Cup fresh mint - chopped
3 x Roman tomatoes - diced
1 x Small cucumber - skin on diced
3 x Tablespoons olive oil
3 x Tablespoons freshly squeezed lemon juice
1/4 x Teaspoon black pepper
Salt to your taste and diet
1 x Cup couscous - cooked to directions on the packet
In a bowl mix the parsley, mint, cucumber, tomato, salt and pepper then add the olive oil and lemon juice and mix well. Next prepare the couscous to the directions on the packet, making sure it is well fluffed to get some lightness then mix
Important: It is essential that the curley leaf parsley be thoroughly washed and dried and the stalks removed before mixing.
