Tuna with Green Peas, Tomatoes and Herbed Fusili Pasta

A classic Tuna recipe that works beautifully with the pasta and the blended Herbs and Spices in the recipe Spice Pouch.

You Will Need - serves 4

1 x 425g Tin Tuna

1 x Medium/large brown onion - diced

3 x Garlic cloves

1 x Tablespoon tomato paste

1 x Cup green peas

1 x Tin Italian diced tomatoes

4 x Anchovies with a little of the oil from the anchovies - optional

250g x Fusilli pasta or pasta you may prefer

Option. Chopped flat leaf parsley

3 x Full teaspoons from your Tuna recipe spice pouch

Your recipe spice pouch will contain: Parsley, Sumac, Cumin, Ginger, Cinnamon, Sweet Paprika, Allspice, Turmeric, Sea Salt, Black Pepper, Chilli Flakes - the added chilli is just the merest touch. Add more if preferred

Method

In a pan over a medium heat add a little olive oil then fry down the onions and the garlic until they are soft and caramelised. Next add the tomato paste, anchovies (if using) the 3 x teaspoons of the spices from your spice pouch, peas and the tomatoes. Stir well.

Now, add the tuna and lemon juice to the pan and stir to blend all the flavours.

Meanwhile, add the fusilli pasta to a pot of boiling salted water and cook to the directions on the pack. When cooked transfer the pasta directly to the tuna pan leaving some of the pasta water clinging to the pasta.

To preserve the flavours of the pasta water do not strain the pasta. Serve directly to the tuna pan.

Add the option of chopped flat leaf parsley as a sprinkle, if you wish
