Greek Baked Eggplants with Tomatoes, Leeks and Feta

The herbs and spices in your recipe spice pouch will be: Greek Oregano, Cumin, Thyme, Parsley, Smoked Paprika, Nutmeg, Fennel, Sea Salt, Black Pepper. If you prefer salt free, please advise when ordering.

When you order you will receive the spice zip lock spice pouch together with a printed hard copy of your recipe.

The 60g pouch will give approx. 5 meal servings, each with 4 people (depending on serving size) which works out at $1.40 for a meal.

You will need

3 x Medium eggplants

2 x Medium leeks - washed and diced

Olive oil - best quality important

1 x Tin Italian diced tomatoes

6 x Garlic cloves - minced

3 x Full teaspoons from your Greek Roasted Eggplant, Tomato and Feta Spice Pouch

Your Spice Pouch contains: Greek Oregano, Cumin, Thyme, Parsley, Smoked Pparika, Parsley, Nutmeg, Fennel, Sea Salt, Black Pepper.

Method

Wash and pat dry the eggplants, remove the ends then slice length wise about 1cm thick then set aside.

In a low to medium heat pan, lightly coat the base with olive oil then carefully brown the sliced eggplant each side. Then place in a baking dish, criss cross pattern, so the slices fully cover the base.

Then using the same pan with a touch more olive oil, add the diced leeks and garlic and the 3 x teaspoons from the spice pouch and cook down to soft and caramelised. Sea salt and Black Pepper are included in this premium spice blend.

Now, place the leeks and garlic evenly on top of the eggplants then evenly spread the tomatoes over the top. You will now have a layer of eggplant, a layer of caramelised leeks and garlic and a layer of tomato.

Next, liberally spread the crumbed feta over the top, sprinkle with olive oil, cover the dish and bake at 180c for 30 minutes...................
