A Chunky Vegetable Bake with Lemon

A flavour explosion of roasted chunky vegetables pairing with the tomatoes and the spices in your spice pouch. Your spices in the spice pouch will be: *Parsley, Paprika, Cumin, Coriander, Onion Powder, Garlic Powder, Oregano, Thyme, Sumac, Cinnamon, minimal Chilli Flakes.
When you order you will receive the zip lock natural spice pouch together with a printed hard copy of your recipe.
The 65g pouch will give approx. 5 meal servings, each with 4 people (depending on serving size) which works out at $1.40 for a meal.

You will need
2 x Medium - large onions
6 x Garlic Cloves - chopped
2 x Carrots, medium - cut chunky
1 x Kumara - 12cm piece cut chunky
3 x Medium zucchini - cut chunky
2 x Medium leeks - washed and cut chunky
2 x Medium waxy style potatoes, cut chunky
Olive oil - you will need lots !
1 x Tin Italian diced tomatoes
2 x Tablespoons tomato paste
3 x Tablespoons lemon juice - essential
Salt and pepper to your taste and diet.
4 x Full teaspoons from your Recipe Spice Pouch
Your recipe spice pouch contains: Parsley, Paprika, Cumin, Coriander, Onion Powder, Garlic Powder, Oregano, Thyme, Sumac, Cinnamon minimal Chilli Flakes
Method
Place the vegetables in a baking dish and liberally pour the olive oil over the vegetables. Add your preferred seasoning then the spices from the recipe spice pouch and the tomato paste, then toss everything with your hands to evenly mix with the vegetables. Now add the tomatoes and toss everything again.
Next add a little more olive oil over the top, cover with foil and bake in a hot oven, around 200c for 10 minutes, then reduce the heat to 180c and bake for a further 1 hour until all vegetables are cooked and caramelised but not breaking up. Then add the lemon juice and stir ready to serve.
