Spice Road Spices
The Art of Flavour
I know we have used this opening before but from the texts received relating to our previous piece we thought it would be good to dig a bit deeper into this special relationship between Goats Cheese (Chevre) and the ancient Egyptian spice blend, Dukkah.
The unique compatibility with Dukkah is simple enough. Dukkah is made up of Nuts, Sesame Seeds, Coriander, and Cumin. The crunchy texture of the nuts is a lovely counter to the smooth rich and earthy tang of the Goats Cheese. And when combined with the citrus and sage notes of the Coriander and the warm, spicy Cumin, you will have pure North African, Middle Eastern flavour. Awesome !
Try this combination generously spread on Bruschetta. The Goats Cheese, Dukkah, plus sliced fresh Tomato and a little quality Olive Oil will give you a winner.
And taking all this further, the other classic best friend for Goats Cheese is Beetroot.
Our American cousins make a great play of Goats Cheese with sliced fresh Beetroot, Orange and Walnuts. Better still, think of a Goats Cheese, Walnut and Beetroot Tart. And back to the Middle East, another classic: Goats Cheese, Beetroot, fresh Figs and Sweet Potato. Winners All.
Wine Compatibility We can think of nothing better than the Clare Valley Kilikanoon, 2019 Rose or a crisp Sancerre wine from the French Loire Valley to further make your Goats Cheese and its partners very happy !.
Part 3 will be a very special Recipe for whole Onion stuffed with Goats Cheese, Semi Dried Tomato and Pine Nuts. The Goats Cheese journey continues !
