Spice Road Spices - Easy Mid Week Natural Flavour Recipes
This is the famous French Canadian Tourtiere pie recipe with ground beef, allspice and maple syrup. A Canadian classic.
You will need
600g x Beef mince - best quality from your butcher
Olive oil
1 x Egg
30ml x Butter
2 x Potatoes - medium
1 x Medium/large onion - finely diced
30ml x Maple syrup
1/2 x Whole garlic bulb, sliced diagonelly across and roasted - this can be done well in advance
1x Teaspoon Dijon mustard
3 x Teaspoons Allspice - ground - see note
2 x Sheets puff pastry
Salt and pepper to taste and diet
Method
Place pastry sheet into dish. Press evenly to bottom and sides of dish so the pastry is even within the dish. With a fork prick a series of holes in the bottom then cut baking parchment paper to fit into the baking dish and add pie weights and bake at 180c for 5-6 minutes. After the bottom pastry is baked, rub the inside with the roasted garlic. You will find the garlic buttery soft after roasting and will spread easily, giving wonderful flavour.
In a heavy based pan fry down the onions until caramelised and soft then add the maple syrup, Dijon mustard, allspice and season to taste, then add the chicken stock. Stir well then add the ground beef and again stir to bring all the flavours together. Then over a low heat, allow to reduce until the liquid has evaporated.
Next steam the potatoes, cut into small cubes and when cooked, add to the beef and the sauce and allow to cool.
Then add the completed filling to the bottom of the pie dish then add the other sheet of pastry to the top and press all round to close the pie, making small slits on the top.
Brush the beaten egg in a small bowl then brush all over before placing the oven at 180c and baking for 45 minutes so the pastry is golden.
