Ingredients

  • The Moroccan Meatballs

  • 600g x Lamb Mince - best quality

  • 1 x Medium/large onion, very finely minced.

  • 3 x Garlic cloves, very finely minced

  • Breadcrumbs

  • Olive oil

  • 6 x Teaspoons of the Moroccan Spice Seasoning with Fenugreek - Salt Free

  • Ingredients for the Sauce

  • 4 x Medium whole tomatoes, peeled and seeded or 1 x Tin whole tomatoes-salt reduced

  • 1 x Medium onion – diced

  • 3 x Garlic cloves – diced

  • 1 x Tablespoon finely grated carrot

  • 2 x Teaspoons ground cinnamon

  • 1 x Teaspoon ground allspice

  • 1/2 x Teaspoon black pepper or white pepper even better

  • 1 x Teaspoon pomegranate molasses - see below

  • Salt.For everyone on a salt free diet this recipe works beautifully, For everyone working to reduce salt, simply add a little salt to your diet, using this recipe as a base.

Preparation

Prepare your meatballs to your favourite method. For our testing of this recipe we worked to the traditional method of adding to the meat finely minced garlic and onion, a small amount of breadcrumbs and the Salt Free, Moroccan Ras el hanout. Rolled into 4cm meatballs.

We fried the meatballs until firm in a medium hot pan with a little olive oil then set aside, removing any excess fat but leaving the nice crunchy bits in the pan ready for the Chunky Tomato Sauce.

For the Chunky Tomato Sauce

In the same pan, add a little more olive oil if needed, then cook down the onions and garlic until soft, giving a nice caramelised flavour, then add the grated carrot, the fresh tomatoes and black pepper, the important Spices - AND - this is the critical bit - Pomegranate Molasses to give the lovely sharp, lemon/citrus flavour lift. Pure magic.

Stir to blend everything together, cook over a medium heat for 20 minutes to reduce a little then place the meatballs into the sauce, allow to warm through and serve with Arborio rice. Awesome !
