Pasta alla Puttanesca from a Naples Bordello

A recipe with a colourful background. It was created for a famous Bordello in Naples. Beautifully easy to put together on a busy evening with flavours from the anchovies, capers, tomatoes and the blended natural seasoning in your black zip lock pouch.

You will need
300g x Spaghetti
6 x Anchovy fillets drained
5 x Large garlic cloves - finely diced
1 x Tin diced tomatoes
1/2 x Cup seeded black or green olives
2 x Tablespoons capers - drained and chopped
1 x Cup chopped flatleaf parsley
Option. 1 x tin tuna - drained
4 x Teaspoons Pasta alla Puttanesca Spice Seasoning: *Allspice, Parsley, Sumac, Turmeric, Cumin, Coriander, Paprika, Ginger, Cinnamon, Black Pepper, Chilli Flakes*.
Salt to your taste or diet
Method
In a medium hot pan add with 1/4 cup of olive oil and when hot add the anchovies and red pepper flakes gently stirring. You will see the anchovies melt into and infusing the oil. Allow about 3 minutes then add the garlic and when soft add the tomatoes, capers, olives and the 4 teaspoons of the spice seasoning.
Stir to bring all the flavours together, cover the pan and keep to a low simmer for around 30 minutes.
Next, add the pasta to boiling salted water and cook to al dente then transfer directly to the pan along with a little of the pasta water taking care to blend the pasta with the tomato, anchovy, caper flavoured mixture. Do not drain the pasta.
The tuna option works beautifully with this recipe. Add when you are adding the tomatoes.
