One Pan Spanish Chorizo with White Beans, Potato and Tomato

You will see how the exciting Chorizo flavour pairs beautifully with the beans, capsicum, potato and tomato without the need for excessive chili. A meal with a lovely full but mellow taste.

You will need
200-250g Chorizo - sliced
1 x Large red onion
3 x Medium red skin potatoes, cut into quarters about 3cm
1 x Tin diced tomatoes
2 x Cups very best home made style chicken stock
2 x Tablespoons tomato paste
1 x Tin of cannellini beans. Drained
Salt to your taste or diet but with the chorizo, not really needed.
4 x Teaspoons from the Spanish chorizo spice pouch. The spice pouch contains: Sweet Paprika, Smokey Paprika, Cumin, Coriander, Sumac, Cinnamon, Turmeric, Black Pepper, Onion, Garlic, Fennel, Oregano and mild Chili Flakes
Method
In a heavy based pan add a little olive oil and when hot add the onions and fry down until soft and caramelised then add the tomato paste to the base of the pan and leave for 2-3 minutes to remove any bitterness.
Next add the stock, 4 x teaspoons from the Spanish spice blend pouch, chorizo, potatoes, beans, tomatoes and capsicum and stir well then bring to the boil then turn down to a low heat and allow to reduce a little while cooking about 20 minutes.
When potatoes are cooked but not falling apart serve with your choice of rice
