1 x Large, brown onion - diced

2 x Medium celery sticks - finely diced

2 x Medium carrots - diced

1 x Teaspoon brown sugar

2 x Tablespoons tomato paste

1 x Tin Italian tomatoes - diced

1 x Medium red pepper (capsicum) seeded and sliced into strips

Salt and pepper to your taste and diet

Method

In a heavy based pan add a little olive oil then add the onions, celery, carrot, red pepper strips and sugar (to enhance the caramelising) and fry down until soft and caramelised. Then add the tomato paste to the base of the pan and allow to sit for a few minutes to remove bitterness, and mix well.

Stir in the chicken or beef stock, tomatoes, mushrooms and the 4 x full teaspoons of the Moroccan Spices from the Spice Pouch.

Now, add the ground beef and stir well to bring everything together. Cover the pan and over a low heat complete the cooking, about 25 minutes, leaving the cover off for the last 5 minutes.

Important: (1) Should you be using more than the 600g mince, you will need to add an additional teaspoon of the Spice Pouch.

(2) Try to buy the ground beef with a small fat content for best flavour. Not lean beef.
