Italian Beef Ragu with Rigatoni Pasta

A totally memorable dish that is beautifully easy and quick to prepare on a busy evening. Using the Italian sausage meat is a wonderful shortcut to amazing flavour.

You will need

500g x Best Italian Sausages - you will be removing the casings

Olive oil

1 x Medium large brown onion

3 x Cloves garlic finely diced

2 x Tablespoons tomato paste

1/2 x Cup white wine

1 x Tin Italian diced tomatoes

1 x Cup heavy cream

Parmiggiano cheese for serving sprinkle

Method

Remove the casings from the sausages by slicing length wise and using a spoon remove the fillings. Break the fillings into 3cm size pieces then in a pan with a little olive oil, brown the sausage pieces and set aside.

Next, in the same pan add the onions, garlic and olive oil if needed and cook down until soft then add the tomato paste to the pan and allow to sit for a few minutes to remove the bitterness then stir into the onions and garlic.

Now, add the white wine, stir to deglaze the pan then add the tomatoes and 4 x teaspoons of the spices from the recipe spice pouch together with salt and pepper to your taste. Stir to bring everything together then add the heavy cream and the parsley and return the sausage pieces to the pan and continue cooking for 10 minutes to be ready for the pasta.

Next add the Rigatoni pasta to salted boiling water in a saucepan and cook to directions on the packet. When cooked simply take the pasta from the cooking water directly to the pan with the sausage meat and sauce - do not drain as you will lose much of the pasta flavour.

Stir everything together, sprinkle with the grated parmiggiano cheese and you will have an amazing Italian Pasta Ragu. Perfect for a busy mid week or anytime for great flavour.
