Method for the Meatballs

Prepare your meatballs to your favourite method. For our testing of this recipe we worked to the traditional method of adding the meat, finely minced garlic and onion, breadcrumbs, feta and 4 x teaspoons of the spices in the pouch, then mix everything with your hands before rolling into 4cm meatballs.

Next In a medium hot pan with two tablespoons of olive oil we fried the meatballs until firm then set aside, removing any excess fat but leaving the nice crunchy bits in the pan ready for the Chunky Tomato Sauce.

For the Chunky Tomato Sauce

In the same pan, add a little more olive oil if needed, then cook down the onions, grated carrot and garlic until soft, giving a nice caramelised flavour, then add the tomatoes and black olives if using and a little more salt and black pepper.

Stir to blend everything together, cook over a medium heat for 20 minutes to reduce a little then place the meatballs into the sauce, allow to warm through and flavour the sauce. Serve with Arborio rice to absorb the flavours. Awesome !
