Greek Fasolada - Amazing White Bean Soup

    You will need

    2-3 Cups white cannellini beans

    2 x Stalks chopped celery

    1/2 x Cup vegetable or olive oil

    3 x Heaped dessertspoons tomato paste

    1 x Dessertspoon sugar

    3 x Carrots - diced

    1 x Onion - diced

    1 x Medium potato - diced

    1 x Bay leaf

    2 x Whole cloves

    Black pepper

    Chopped flatleaf parsley

    Method

    Wash cannellini beans 2 - 3 times then boil

    When boiling after 1/2 hour change water and boil again. Then change water and add enough water to cover the beans plus 2 - 3cm water.

    Next add chopped celery, parsley, carrots, onion and potato. Then add 1/2 x Cup vegetable or olive oil, tomato paste, pepper, bay leaf, cloves and sugar.

    Boil uncovered then simmer uncovered until soft and cooked and water has evaporated.

    Salt must only be added at the finish of the recipe - this is important.
