Greek Fasolada - Amazing White Bean and Vegetable Dinner

For the times when you would like a change from chicken and meat. A wonderfully rich and substantial dinner recipe. Regarded as a national treasure in Greece, without the need for herbs and spices.

    You will need

    2-3 Cups white cannellini beans

    2 x Stalks chopped celery

    1/2 x Cup vegetable or olive oil

    3 x Heaped dessertspoons tomato paste

    1 x Dessertspoon sugar

    3 x Carrots - diced

    1 x Onion - diced

    1 x Medium potato - diced

    1 x Bay leaf

    2 x Whole cloves - important

    Black pepper

    Chopped flatleaf parsley

    Method

    Wash cannellini beans 2 - 3 times then boil.

    When boiling after 1/2 hour change water and boil again. Then change water and add enough water to cover the beans plus 2 - 3cm water.

    Next add chopped celery, parsley, carrots, onion and potato. Then add 1/2 x Cup vegetable or olive oil, important the olive oil is added at this point, tomato paste, pepper, bay leaf, cloves and sugar.

    Boil uncovered then reduce to a simmer uncovered until soft and cooked and water has evaporated.

    Salt must only be added at the finish of the recipe - this is important.
