Baked Chicken with Orange Zest

A perfect dinner recipe with the brightness of the orange zest and juice and your zip lock pouch with beautifully blended herbs and spices for the recipe containing Allspice, Sumac, Ginger, Parsley, Turmeric, Cumin, Coriander, Sea Salt and Black Pepper. The 60g Herb and Spice pouch will give approx. 5 meal servings, each with 4 people (depending on serving size) giving $1.40 for a meal.

You will need Serves 4-6

4 x Chicken thighs - trimmed to your liking

Olive oil

1 x Tablespoon orange zest

1 x Cup freshly ground orange juice

2 x Tablespoons honey

1 x Teaspoon Soy sauce - Light soy sauce would be ok

3 x Full teaspoons from the blended Herbs and Spices from your pouch

The herbs and spices in your pouch are: Allspice, Sumac, Ginger, Parsley, Turmeric, Cumin, Coriander, Sea Salt, Black Pepper

Method

Place the chicken breasts in a medium bowl and in a seperat bowl make a marinade of the orange juice and orange zest, one tablespoon of olive oil, honey, soy and the three teaspoons of the blended Herbs and Spices from the pouch.

Then using your hands, mix and rub the marinade well into the chicken and refrigerate for at least one hour.

Next, allow the marinated chicken to return to room temperature and place everything in a baking dish with sides, making sure to cover the chicken with the marinade.

Now, cover your dish and bake at 200c for 25 - 30 minutes until chicken is firm but not overcooked. Serve with your choice of rice and fresh broccoli.
