Ingredients : Allspice, Ginger, Chilli, Coriander, Turmeric, Mustard powder, Black Pepper, Cumin, Garlic granules, Sea salt.

500g x Chicken thighs, cut into 4cm pieces
200ml x Chicken stock
1 x Small red onion
50ml x Lemon juice
3 x Finely chopped spring onions
2 x Tablespoons tomato puree
6 x Full teaspoons Spice Roads Jamaican Spice Blend
300g x Sweet potatoes, peeled and whole
10 x Firm cherry tomatoes
Small bunch of fresh coriander ( cilantro )
Cut small slits in the chicken pieces and in a mixing bowl lightly coat with the lemon juice and sprinkle with the diced spring onions. Rub the Jamaican Blend thoroughly around the chicken and push into the slits. Mix well
Refrigerate for at least 2 hours and preferably overnight for maximum flavour
Dice the red onion and fry in a heavy pan until soft then add the chicken pieces, chicken stock, tomato puree and the cherry tomatoes. Simmer over a low heat until meat is cooked. Be careful not to over cook the chicken !
In a separate pan boil the sweet potatoes until firm then slice into small squares and add to the chicken
To serve sprinkle the coriander leaves over the chicken
Important : Sea Salt and Black Pepper has been added to the Jamaican Blend.
Comment : In testing this recipe we served with well buttered potato mash and a four leaf crisp salad with green beans and halved stuffed green olives. Special !
