Mini Meatloaves with Zucchini, Anchovies, fresh Mint and Tomato Sauce
500g x Best minced beef
3 or 4 x Tablespoons tomato puree-as you choose
6 x Tea spoons ( heaped ) Spice Roads Spices Mediterranean Blend
2 x Eggs
1 x Small brown onion - finely diced
2 x Garlic cloves, finely diced
2 x Tablespoons fresh mint, finely chopped
1 x Cup finely grated zucchini. Pat dry
4 x Anchovies - very finely diced - optional
Small handful of bread crumbs.
50ml Pine nuts
1 x Tablespoon of lemon zest
2 x Tablespoons Ricotta cheese
Important: Salt and Pepper has been added to the Mediterranean Spice Blend

Mix the beef, Mediterranean Spice Blend, tomato puree, eggs, zucchini, mint, pine nuts, lemon zest, garlic, anchovies and onion in a bowl and form into small loaves around 8 - 10cm each.
Sprinkle bread crumbs and ricotta over each then squeeze a light covering of the tomato sauce over the top of the Mini Meat Loaves.
Bake in a preheated oven at 180 degrees for approx 1 1/2 hour, depending on your oven, adding a little more of the tomato sauce after 3/4 hour.
Check the Mini Meatloaves are firm to touch and as a suggestion, serve with a tomato, red wine based based sauce.
