Ethiopian Beef Stew with North African Spices and Fenugreek
500g Diced Chuck Steak
1 x Medium red onion, sliced
4 x Cloves of garlic, crushed (do not burn)
6 x Teaspoons of Spice Roads North African Spice Seasoning Blend. See Method for the make up of Spices
1 x Tablespoon of Pomegranate Molasses
1 x Cup beef or chicken stock
2 x Medium carrots diced
1 x Tin Italian diced tomatoes
2 x Tablespoons tomato puree
1 x Small eggplant, diced
2 x Teaspoons Balsamic Vinegar
Fresh Parsley, finely chopped
Olive Oil, best quality if possible. Grampians Toscana or similar
Important: Notes: While this Stew is fairly traditional for North Africa, the unique flavours come from the Pomegranate Molasses and the North African Spice Seasoning.
Pomegranate Molasses is available at most specialist food store and will become a wonderful flavour weapon in your kitchen
Dust the meat with a light coating of plain flour ( no need for seasoning as salt and pepper are already in the Spice Seasoning Blend ) and brown with the olive oil in a heavy pot. Then set aside, deglaze the pot with a little more Olive Oil and add the Onions and Garlic.
Cook the onions and garlic down until soft, taking care not to burn the Garlic then add 6 heaped teaspoons of the Spice Road Spices North African Spice Seasoning Blend, 1 cup of the stock and the Pomegranate Molasses. (For further details on the Pomegranate Molasses, go to our Spice Blog )
Return the meat to the pot and stir in with the Onions, stock and the Spice Road Spices North African Seasoning
Now add the Carrots, Eggplant, Tomatoes and Tomato Puree. Stir well and place in a pre heated oven at 160c for 1 hour then remove from the oven, stir and add the Balsamic Vinegar.
Cook for a further 1 hour until meat is almost breaking up. Stir in the fresh Parsley and serve with Arborio Rice or Couscous.
The Spice Blend has salt and pepper added, however, additional may be required to your taste.
