Saving The Side Dish - Part 1. Potato and celeriac Mash

Ingredients

4 x Small Celeriac Bulbs

4 x Pink Eye or King Edward Potatoes

3 x Cups Milk

3/4 Cup Double Cream

3 x Garlic Cloves

30g Butter

Salt and Pepper to taste

Comments: A classic recipe that will take this Side Dish to the high ground of your dinner.

Preparation

Peel and trim the Celeriac, taking care to rinse thoroughly, then dice into small squares, Chop the potatoes, Crush the Garlic.

Boil the Celeriac in the Milk, this gives a lovely creamy colour, about 10 minutes until soft, then place in a blender, add the Double Cream, Butter, Salt and Pepper and the Garlic.

In a separate pot boil the potatoes and mash with generous amount of butter then fold into the blended Celeriac.

Note Do not add the potatoes to the blender as this will cause the potatoes to break down and give an unpleasant starchiness to the dish.
